The grapes were harvested at 25 degrees Brix on September 9 and underwent a three-day cold maceration. The wine fermented in an open-top vessel with daily pump-overs; it was then transferred to neutral French oak barrels for malolactic fermentation and aged for ten months before being filtered and bottled.
